Type of a scam Fake Invoice/Supplier Bill

Our customers from our small business have started receiving these fake invoices that show to be from us, but of course are not. One was from Mexico, one from Honduras, etc..

What steps can we take to ensure this doesn’t keep happening, if any? I even removed our invoice app, Tiny Invoice, that I loved using so much and that gets great reviews since it seemed the only logical explanation of how these scammers received our customers email addresses, but the app may have had nothing whatsoever to do with it. ??
